The name itself rings so many memories in us having aloo palak in school canteens, dhabas etc, today we will try to bring back our memories.

There are many ways of cooking spinach and potato but today's version would be easy to make.
Many of us would have two plates with roti and paratha but trust me its equally good with bread.

Strawberry cobbler





Its Christmas time and what better time to bring in strawberry than now. The juicy strawberries made my chef brain tick in cooking mode. I decided to try a strawberry cobbler. The most famous, devoured and loved dessert in this part of country.





Cobbler refers to a variety of dishes consisting of fruit or savory filling.The fresh strawberries and fluffy crust makes this dessert pleasing on eyes and easy on stomach.
 

The full fruit of strawberry is combined with syrup and topped with a creamy based dough. This concoction is baked until the strawberries are bubbling.

Fresh strawberry cobbler

Ingredients
  • Fresh strawberries- 3cups
  • sugar- 2cup
  • All-purpose flour-1cup
  • Baking powder-2tbps
  • Milk-1cup
  • Vanilla extract-1/2tbps
  • Butter-1stick(melted)
  • Salt

Procedure
  • Preheat oven to 375 F or 200 C
  • In a bowl add strawberries,1cup sugar and coat them well,now set this aside till we prepare the batter.
  • In a large bowl whisk flour,sugar,baking powder and salt.
  • Once all these flour are mixed well add melted butter,milk,vanilla extract,stir them until the mixture is fairly soft.
  • Shift the batter in an evenly greased baking dish and add strawberries evenly on top of batter,do not stir.

  • Bake this for around 15-20mis in a preheated oven,or until the cake turns golden brown and fluffy.

  • The yummy strawberry cobbler is ready to serve ,you can serve this warm or cold.
  • I would prefer having it with vanilla ice cream :)

    Note
    • Any kind of berries can be added.
    • Don't over stir the batter.
    • You can cut down the amount of sugar as per your taste.

    MultiGrain Crackers

    MultiGrain Crackers is a crunchy healthy snack made from different spices and flour.Its a perfect tea time crackers.
    You can even place cheese or salad and make it as an appetizer,if you cut them in diamond shape.

    Ingredients

    • Chenna powder - 1 cup
    • Ragi powder - 1/2 cup
    • Wheat flour/aata - 1/2 cup
    • Pudhina/Mint - 1 smal bunch
    • Ginger - 1 inch size
    • Cumin Seeds/Jeera - 1 tbps
    • Carom seeds/omam - 1tbps
    • Asofetida /hing- pinch
    • Green chilli - 3 or 4
    • Salt
    • Oil

    Procedure

    • Grind mint,ginger,jeera,hing,omam,green chillies into a fine paste.
    • Now add this paste,salt to chenna,ragi,wheat flour and knead it well.
    • Take a small portion of dough and roll it as you do it for roti and make holes to this roll with fork,now cut them into your desired shape with cookie cutter or knife.

    • And fry them till they turn golden brown color,repeat this for the rest of the dough.

    • Store them in a air tight container and serve these yummy crackers with tea.

    Pepper Ladies finger

    Here is a very simpler version of cooking ladies finger with less ingredients.It goes well with rice and roti.


    Ingredients

    • Ladies finger - 1 cup
    • Garlic pods - 5 to 7
    • Pepper - 1 tbps
    • Oil
    • Salt

    Procedure

    • In a microwave safe bowl add 1/2 tbps oil,ladies finger and microwave it for around 5 mins.
    • In a pan add oil,garlic,microwaved ladies finger,pepper and salt.
    • Cook them til the ladies finger are cooked well.

    Semolina Cookies/Rava Vanila Biscuit

    Rava biscuit is a very simple and easy sweet snack.It hardly takes 15 mins to prepare.
    This can be deep fried or cooked in oven.In this version I am using oil.If you cook in oven its semolina cookie :)

    Ingredients

    • Rava - 1 cup
    • Sugar - 1 cup
    • Maida - 1 tbps
    • Vanilla extract or elachi  powder- 1/2 tbps
    • Coconut grated - 1 tbps
    • Cashew finely chopped - 1 tbps
    • Cold Milk - 2 tbps
    • salt - pinch
    • Oil (deep frying)

    Procedure

    • Add all the above ingredients to the rava flour and combine them well by adding milk slowly to form a dough.
    • Allow this dough to rest for 5 to 10mins.
    • Meanwhile allow oil to heat.
    • Take a small amount of dough and roll it into your desired shape and deep fry them until they turn golden brown color.
    • Repeat the same for rest of the dough and store it in an air tight container.

    Note:
    If your doing it in oven
    • Preheat the oven to 400 F.
    • Baked the rolled cookies in oven for 10 -15 mins

    Medhu Pakoda

    Here is an other simple and tasty evening snack "Medhu pakoda".Softer version of onion pakoda with different texture and taste.

    Ingredient

    • Gram flour - 2 cups
    • Soda - 1/2 spoon
    • Onions (finely chopped) - 2 to 3 
    • Green chillies(finely chopped)- 4 to 6
    • Ginger - 1/4 spoon finely chopped
    • Hing - pinch
    • Coriander leaves - bunch
    • Curry leaves - 8 to 10
    • Salt
    • Oil - deep frying.

    Procedure

    • Heat oil in a pan for deep frying.
    • Mix all the above ingredients by adding 1 tbps of hot oil and water slowly to make a stiff dough.
    • Take a spoonful of this mixture and deep fry,repeat this for rest of the dough.Fry them until golden brown color.
    • Serve the pakoda with any of your fav chutney.
